We're bringing you another fantastic recipe cooked with our brand new Weber Gourmet BBQ System Dutch Oven; due to be released in time for the 2016 Summer BBQ season.

Our #aroundtheworldin80bbqs tour continues with Belgium and some seriously tasty mussells!

Moules-frites

 

INGREDIENTS

You will need the following:

  • Salt - Generous pinch
  • Pepper - Generous pinch
  • Fennel seed - 1/2 Tsp
  • Double Cream - 300ml
  • Chorizo - 250g
  • Fresh Best Quality Mussells - 3KG
    (debearded and ready for the pot)
  • White Wine - 250ml
  • Garlic - 3 cloves
  • Shallot - 1 whole
  • Cherry or Baby Plum Tomatoes - 2 handfuls
  • White Onion - 1 medium sized
  • French Bread (to serve)
  • French Fries
    (Frozen Oven Cook Style is perfectly fine)

IN THE KITCHEN

  • Roughly chop up the chorizo into bite size pieces
  • Finely chop the shallots and garlic
  • Wash Tomatoes

EQUIPMENT

Whilst you can use both a Gas or Charcoal Weber BBQ for this recipe;
We've used the following equipment:

  • Weber Genesis S-330
  • Gourmet BBQ System Dutch Oven
  • Cooking Tongs/ Wok Tools

AT THE BBQ

  • Set up your BBQ for indirect roasting on a medium-high heat

  • Fry the chorizo until coloured and oils released.
  • Remove from pan and place on kitchen roll to absorb some of the fat.

  • Fry shallots until tender and coloured
  • Add tomatoes and garlic
  • Cook indirectly for 2-3 minutes
  • Add mussells, wine and 150ml of double cream.
  • Stir evenly to coat and put the lid on your dutch oven.

  • Let the mussells cook indirectly on a medium heat for 6-8 minutes
  • Cook chips indirectly (on a separate BBQ if you have one or failing that in the oven in your kitchen at home).

  • Remove mussels from dutch oven and place in a large pan and keep in a warm place.
  • Add your chorizo and another 150ml of double cream the dutch oven and bring your sauce to the boil.
  • Simmer for 2-3 minutes.

  • Dish up your mussels in a nice big bowl and drizzle over a generous serving of sauce.
  • Serve your frites in seperate bowl on the side and tuck in!
  • Be sure to discard any mussells that have not opened during the cooking process.
  • We recommend some thickly sliced french bread on the side to dip into all the lovely sauce, Delicious!
